Ingredients
1Tablespoonbutter
2cups white long grain rice
1/3 cupdiced Jalapenos
1/3cupdiced green onion
1clovegarlic, crushed
1Tablespoonchili powder
1/2TeaspoonChipolte, or more to taste
1 TeaspoonCumin
1/2Teaspoonsalt
2 1/4cupschicken broth
1/2cuptomato sauce
Instructions
In a saucepan on low heat, melt the butter and add the rice, peppers, onions and garlic. Saute the ingredients for 2 minutes, coating the grains of rice with the butter. Stir in the chili powder, chipotle, cumin and salt.
Add the chicken stock and tomato sauce to the pan. Turn the heat to medium high and bring the ingredients to a simmer. Turn the heat down to low, cover the pan with a lid and cook for an additional 20 minutes. After 20 minutes, turn the heat off and let the ingredients sit in the pan covered with a lid for 9 minutes. Uncover, fluff the rice with a fork and serve hot.
