Ingredients

  • 1 lb fresh green beans
  • 1 cup chopped onion
  • 1 Tablespoon minced jarred garlic
  • 1 cup chopped red bell pepper
  • 1 Tablespoon butter
  • 1 Tablespoon olive oil
  • 1 cup chicken broth
  • 1/2 Teaspoon salt
  • Ground black pepper to taste

Instructions

  • Rinse the fresh green beans under cold water.  Snap the stem ends off of the the green beans.
Melt the butter in a large skillet over medium heat. Add the olive oil to the pan. Add the garlic, red peppers and onions to the skillet, cook and stir one minute. Add the fresh green beans to the skillet. Place a lid over the skillet and cook until green beans are a gorgeous bright green color.
Add the chicken broth, salt and black pepper to the pan. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape.
Cook for 20 - 30 minutes or until chicken broth has evaporated and beans are fairly soft.  You can add more chicken broth during the cooking process but don't be afraid to let it cook away so the onions and peppers can caramelize. Remove the green beans from the skillet to a serving dish. Serve immediately.
