Ingredients

The Filling

  • 3/4 cup firmly packed light brown sugar
  • 3 Tablespoons all-purpose flour
  • 1/4 Teaspoon cinnamon
  • 1/8 teaspoon salt
  • 2 Tablespoons lemon juice fresh or bottled
  • Two - 29 ounce cans pear halves in light syrup drained and cut into chunks

The Topping

  • 1 cup all purpose flour
  • 2 Tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup buttermilk make your own buttermilk by adding 1 Tablespoon lemon use to 1 cup milk, let sit to curdle
  • 3 Tablespoons butter melted
  • 1 tablespoon sugar for sprinkling, if desired

Instructions

  • Preheat your oven to 375 degrees. Butter an 8x8 baking dish.
  • Place your pear chunks in the buttered 8x8 pan, set aside.

For the filling

  • 1. In a heavy duty saucepan combine the brown sugar, flour, salt, cinnamon and lemon juice. Over low to medium heat stir the mixture until it's thick and melted down. It doesn't look like it would melt down but it will, it will be thick and have a light brown color. As soon as it is melted , take it off the heat and pour it over the pears in the baking pan.

For the topping

  • 2. In a large bowl combine the flour, sugar ,baking soda and baking powder, whisk to combine. Add the buttermilk and melted butter. Beat with an electric mixer until just combined. Top the pears with large spoonfuls of the batter, sprinkle with sugar if desired. Bake 30 -35 minutes until topping is golden brown and filling is bubbly. Serve with ice cream if desired.
