Hi Gail. I looked up what to substitute for blue cheese in a recipe and what I found was Feta Cheese. Try using the Feta as a substitute for the blue cheese Gail. If you make it with the feta, please come back and let me know how it worked for you, I’d love to know.

Oh my goodness this looks so delicious and comforting! I love the idea of using gnocchi instead of maccaroni – so creative and I bet it’s way more delicious than classic mac and cheese. Will definitely try this recipe soon! YUM!
