Hi Teresa you pour enough boiling water in the pan to go half up the ramekins. The towel in the pan keeps the ramekins from moving while you pour the water into the pan. I’m seeing that you’re baking in the oven with a towel on the bottom of the pan and I’ve never done that before so just a wee bit leerie. The recipe sounds really good though!
